I’ve made this about 8 times now. I tried another of these (thanks to my friend Wren who came to my rescue one night when I needed a quick fix for a good dinner) and liked it so much that I decided to try this one.

The first time – I made it exactly to the instructions.

The second time I added capers. Delicious

The third time I added sundried tomatoes and capers. Even more delicious.

It takes a little longer than 20 minutes to cut, dredge, and cook the chicken. We cut our chicken smaller and cook it longer so it’s a little crispy. Paired with a crunchy loaf of bread from Panera and some Parmesan to top it off = perfect meal with enough left over for lunch.
